Today we’d like to introduce you to Chantal Lucas.
Hi Chantal, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today.
Luchals was founded by Los Angeles Native Chef Chantal Lucas and St. Petersburg Florida native Travares Lucas in 2016. The idea for Luchals came about while serving a tour at Schofield Barracks in Hawaii. We wanted to present a different style of seafood to the community and Colorado happened to be the perfect place to do so.
Luchals started off by catering to local promoters and organizations. Word spread like wildfire and by 2017 Luchals grew to become a food truck, during this time we traveled to different food truck rallies, schools, military posts, and events within the city. In 2020 an opportunity arose that would allow Luchals to become a storefront inside of an eclectic upscale food hall which would be the first of its kind in Colorado Springs.
The opportunity was tossed back and forth as we have had a major following with our food truck but we were able to look at scaling our company and solidifying our brand. We officially opened up Luchals storefront inside of C.O.A.T.I. Summer 2020.
I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey have been a fairly smooth road?
Being a business owner has not been easy. You can’t snap your fingers and think money will flow effortlessly, you can’t assume that you will always have staff, there are so many aspects of being in business and it will definitely show you if you have the G.R.I.T. to withstand all adversities. If I had to choose my most challenging moment it would have to be when we went through Co-VID19.
If there was a time that we were afraid of our business failing it was that moment. We suffered through shortages in food and staff, We had no idea that 3 months after we opened our new space we would go to 20% capacity in a place where libations and events are the centers of attention. We had to modify schedules and change food options to fit what the market was able to provide.
It was hard because having to explain that there was a catfish shortage due to distribution problems became a very hard task since catfish are the most popular item for us. However, our community stood behind us and helped keep our staff employed this was a blessing because we poured our savings into keeping our business open. We wanted to make sure that we didn’t have to lay off our staff during the most scariest of times and it definitely led to a lot of uncertainty for the future.
Our team stood together and worked overtime to make sure that we were giving a great guest experience without the guest experience because our customers were are truly important. It was a true act of faith that got us through we are so blessed to come out of it and though we are still facing food inflation we are still here to serve our community

Our company prides itself on outstanding customer service, great food, and service to our community. We want to bring a different twist to Seafood and Southern Food. Our team of dedicated chefs love what they do and insure they are providing what our guests need.
At our downtown location we offer a delicious brunch menu Saturdays and Sundays 11 am-3 pm. Shrimp and Grits, French Toast, and other delicious items can be found on our menu. Don’t forget we also cater! Our catering department can produce just about anything you desire.
We specialize in Seafood, Italian, and Latin we even offer some vegan options. We can provide food for just about any event big or small as we can feed up to 400 guests for an event at this time. We have worked with many great companies and organizations ranging from Colorado Springs College, Hillside Connection, Colorado Black Chamber Of Commerce, US Bank, Navy Federal, and many others.
Our food truck is also available for delicious treats. We stopped service on our food truck to give it an overhaul and new look it has currently been renovated and is on the move Fridays and Saturdays.

What matters to us the most is the community in which we serve and that is including our hard-working associates. Without the community, Luchals would not be what it is today. The outpouring of support throughout these last 6 years has been unimaginable. Our loyal associates have stood by our side through ups, downs, confusion, and anything else that has been thrown at them.
We truly have a dedicated team of professionals that believe in our mission and have passion for what they do; We are truly blessed to work alongside them. They are definitely our backbone We can not wait to give back in an even bigger way. We have so many things in store for our community!
