Hidden Gems: Meet Mike Silvestri of Revolver Food Truck

Today we’d like to introduce you to Mike Silvestri.

Hi Mike, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
My partner (Scott Glaser) and I have been working in food all of our lives, we always dreamed of bringing our own visions and concepts to the people. We made the leap last year to bring that to light. We both ran every aspect of a restaurant and kitchen as well as retail food service and food retail management. We felt this was the only logical next step for us.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
We have had our share of hurdles lol as all young businesses do I imagine. We had a 3rd partner when we started who ended up moving out of state. In Colorado, the weather is always a challenge driving a food truck, but we had anticipated much of these things since we have opened plenty of kitchens and shops for other companies, we have a bit of forsite into planning for the unexpected. Plus, the lumps on the head are the best learning lessons at times.

Great, so let’s talk business. Can you tell our readers more about what you do and what you think sets you apart from others?
Revolver foods LLC focuses on Colorado-sourced ingredients and elevating those products with our personal touch. Inspired by the seasons and what’s available we “revolve” our menu seasonally. We also both just like to be creative with food so you will see all types of cuisine featured on our menus. We are fairly new to the food truck scene, but our absolute best-selling item is our “OsoBucco Grilled Cheese with a consumé dipper”. It’s rich, cheesy, the dipper has been described to us as “unreal” and “ridiculous”, and it will definitely fill you up! What sets us apart is our ability to be maneuver our menu with what’s available, instead of sticking to a single concept, our concept is to be flexible with a sustainable products. We will always have a burger, our rev spud chips, some kind of taco, and I think people may hurt us if we ever took the “Oso” off the menu, but everything else will rotate seasonally. Every time you buy from revolver, you’re supporting several other Colorado-based companies at the same time. We love this state and we just wanna show people all the good stuff it has to offer. We also offer catering, company parties and lunches, weddings and will custom plan a menu with you to fit your needs.

What would you say have been one of the most important lessons you’ve learned?
Never stop learning, be open-minded to new ideas and concepts. Be flexible and just have fun with it all.
