Meet Jon Chavez of Fireborn Chili

Today we’d like to introduce you to Jon Chavez.

Hi Jon, thanks for joining us today. We’d love for you to start by introducing yourself.
We are a family of 6, we have 4 daughters ages 6-18 plus my wife and I. We all have a deep love for food and culture stemming from my father owning a restaurant and my grandfather being a chef. I always loved cooking different foods from different cultures and spicy food is life in our family. My wife and I were able to start an online clothing business that allowed us to quit our day jobs and work full-time for ourselves.

We loved working from home and allowing our family to be close and being able to do things we never got to before working full time. We wanted to do something that we were passionate about and that was food! We had been making an Asian chili oil for some time that we had been perfecting for many years and would bring it camping and to family events and everyone would rave about it!

Countless people told me if we started making it they would buy it and that’s when it dawned on us that we have something special here. We had decided as a family that we wanted to bring our family recipe to market.  So I began drawing up our logo and trying to come up with a clever name while my wife started working on what it would take to manufacture our product.

It was a daunting task to get our manufacturer’s license from finding an FDA-regulated kitchen to sending our product to numerous labs to get it tested to make sure it was safe for our consumers. From there we started making our product by hand and entering every market, show, and event where we could sell it! A year later we are now in our first stores and planning on expanding through the rest of the nation.

There are many different chili crisp oils out there but our claim to fame so to speak is making ours with the hottest chili in the world… the Carolina reaper! My oldest daughter took on the gigantic task of what is social media and the website, and she is killing it! My wife now does all of the logistics for the company while my daughters and I work on events and the making of the product. We are so proud of how far we have come and there’s only up from here!

Alright, so let’s dig a little deeper into the story – has it been an easy path overall, and if not, what were the challenges you’ve had to overcome?
It’s been a tough journey to get to where we are. From the beginning, we ran into a problem because we wanted to capitalize using the cottage food law that is in place in Colorado which states you can sell food from your kitchen as long as you’re not selling more than 200 thousand in sales per recipe per year.

We started to do that and sell at events until about a month in and the health department visited us and shut us down because you can’t sell infused oils as part of the cottage food law. We were under the impression that we were okay to do so from the lady that we talked to at the health department. Then we were informed that since it was an infused oil with fresh ingredients that we needed to have a manufacturer’s license because it was a health risk.

From there we had to get it tested multiple times, change the way we cook the product, and had to write a full 45-page document on how we would make everything. We had got it rejected twice till we finally got everything right and got our licenses and now can sell anywhere in the nation.

Alright, so let’s switch gears a bit and talk business. What should we know?
My business is called Fireborn Chili Company. We sell a condiment called chili crisp, which has recently gotten popular this year. We have two kinds, our Original and our XXX hot. Chili crisp is better known as chili oil, which is an Asian condiment. Chili crisp is our rendition of chili oil, as it consists more of crunchy bits than it does oil. It contains garlic, shallots, peanuts, sesame seeds, soy sauce, and five different types of chili including the Carolina reaper, all of which are fried in premium peanut oil.

Our chili oil is different from others because it’s not just spicy, it also has a ton of flavor to it. It’s also the only chili crisp oil in the market that is made with the Carolina Reaper chili, which holds the Guinness World Record for the hottest chili pepper in the world!

What was your favorite childhood memory?
My favorite childhood memory is when my dad used to take me with him to his restaurant early in the morning, and pick me up after school to go back to the restaurant.

I would help him in the kitchen and would love the evening rush! I would always fall asleep in the booth and wake up in my bed. That was a special time, my father isn’t with us anymore and I wish he could have seen us grow and been part of the business.
