Today, we’d like to introduce you to Nicole Waters.
Hi Nicole, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers.
I started Bites With Coco just before the pandemic in 2020. Before creating the brand, I would sprinkle in my food posts/finds on my personal Instagram account.
However, I wanted to have a specific place to showcase what foods I was cooking and eating – and this is how Bites With Coco came to life! I was born in Salisbury, Maryland, and grew up in Dallas, Texas. In the Fall of 2021, my partner and I took a leap of faith and moved to Colorado when he received a job offer in Boulder that he could not pass up. My now-fiancé, Josh, is a huge help to Bites With Coco – he is actually the one who thought of the name and is always willing to lend a hand with my posts (literally!)
The Dallas food scene has grown tremendously since I moved, which is really great to see. I have been having so much fun over the last couple of years trying out the different bites in Colorado – there is an endless supply of amazing local businesses to support. Between visiting new restaurants, building relationships in the community, and showcasing some of my partner’s at-home chef capabilities (seriously – he’s impressive!), my foodie journey has been a fun ride so far!
We all face challenges, but looking back, would you describe it as a relatively smooth road?
Like many creators, I found it challenging to find ways to best support local businesses during the pandemic (specifically once quarantine started). This was a time when local businesses needed support more than ever, and sadly a lot of my favorite places ultimately had to shut down.
This is also when Bites With Coco started taking off due to everyone being at home and on social media at a higher frequency. I really made it a goal to support local businesses and do my part to ensure they could survive during such a tough time.
Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
I love showcasing businesses/events that I genuinely enjoy – there is no “fluff” on my page.
I aim to make sure my reviews and recommendations are authentic and true to me, which is something I am definitely proud of. My partner is a home chef so I love showing off what he makes and hopefully giving inspiration to some of my followers on meals that they can make at home.
I think that mixing in more polished posts when I go out to restaurants with my posts of what meals we’re making at home gives my account a more authentic/real feel. I really am just living my regular life and snapping pictures of the tasty meals I’m eating!
What makes you happy?
As cliché as it sounds, food makes me happy. Whether you’re taking the time to cook a nice meal for someone you love or you’re at a restaurant enjoying the company of your family/friends – food creates community and memories. If you’re having a bad day, these experiences involving food can turn it around.
If you’re out celebrating a job promotion or birthday, food can enhance those moments. I believe that simply enjoying a meal with others is a way to build community, and that is powerful. It’s a universal language if you will!
