Hi Asal, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
My path to pastry wasn’t a straight line. I started with a Bachelor’s degree in Biology Science, but my passion for the kitchen never let go. I’d spent over 15 years cooking across different cuisines and eventually made the decision to follow that passion fully. I earned my Professional Baker Certificate from Emily Griffith Technical College in Denver, then traveled to Las Vegas for a Chocolate Showpiece Masterclass at Amaury Guichon’s Pastry Academy, where I sculpted a chocolate whale piece. I went on to work as a pastry cook at The Brown Palace Hotel, one of Denver’s most iconic luxury properties, before earning my Professional Pastry Arts Diploma from the Auguste Escoffier School of Culinary Arts. All of that experience led to Chattal. The name comes from Iraqi slang for “fork,” a nod to my heritage and to the idea that every great dessert begins with that first bite. I wanted to build something that reflected my full journey, the precision of French technique, the richness of my Iraqi roots, and an uncompromising commitment to quality. Every cake I create uses the highest quality ingredients and is handcrafted personally by me. Today Chattal is a luxury cake business serving the Denver metro area. I don’t do mass production. Every cake is built from scratch with meticulous attention to detail, precision in every layer, and a whole lot of love.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Starting out in professional kitchens was humbling. You go from years of cooking at home to fast paced environments where every detail matters and the standards are incredibly high. I had to earn my place and prove myself every step of the way.
Building Chattal has had its own challenges too. Running a luxury cake business without a traditional storefront means you have to work harder to build trust and get your name out there. There’s no foot traffic. You have to let the quality of your work speak for itself. Through all of it, every challenge has pushed me to be better, work harder, and stay committed to the standard I’ve set for myself and for Chattal.
As you know, we’re big fans of Chattal. For our readers who might not be as familiar what can you tell them about the brand?
Chattal is a luxury cake business based in the Denver metro area. I specialize in a signature collection of handcrafted cakes. These aren’t simple layer cakes. They are multi-component creations with different sponges, creams, ganaches, and confit all working together in every slice. What sets Chattal apart is that I am the only person making your cake. There is no production line. Every single cake is built from scratch by my hands using the highest quality and freshest ingredients. I even make my own nut pastes from scratch. When you order from Chattal, you are getting my craft, my training, and my full attention. I’m most proud of the fact that customers consistently tell me my cakes are on par with desserts they’ve had at high end restaurants. That is exactly the standard I set out to achieve. I wanted to bring that level of quality and artistry to people’s homes, events, and celebrations. We deliver across the Denver metro area including Brighton and Greeley, and offer pickup by appointment in Lakewood.
What do you like and dislike about the city?
What I love most about Denver is the community. People here genuinely care about supporting small businesses and local makers. When someone discovers Chattal and then tells their friends and family about it, that means the world to me. There’s a real appreciation here for quality and craftsmanship. What I like least is probably the elevation. As a pastry chef, altitude affects how your cakes rise. Developing recipes at this elevation takes extra care and testing to get everything just right. You learn to work with it, but it definitely keeps you on your toes.
