Today we’d like to introduce you to Chase and Melissa Devitt.
Thanks for sharing your story with us Chase and Melissa. So, let’s start at the beginning and we can move on from there.
We met while attending culinary school in 2006 at Le Cordon Bleu, Las Vegas. Deciding it was time for a change, we relocated to Boulder a few years later where we both worked a few different local restaurants. Later hearing the call of the mountains as most do in Colorado we relocated to Vail. We both spent our time in the Vail valley working at the Park Hyatt Beavercreek. Chase moved into a lead chef role and Melissa found her love for guest relationships while working in every facet of their fine dining restaurant. After four years in Vail, we decided to move back to Denver and Chase began working as a Sous Chef at Oak at Fourteenth in Boulder, while Melissa became the General Manager of Tables on Kearney St. in Park Hill. Chase’s partnership with the owners Steve Redzikowski and Bryan Dayton grew and when they opened their third restaurant Brider, Chase was offered the role of managing partner.
We both have such a love for so many things in the hospitality industry, and since it had been some time since we last worked on a project together we were ready to get back on the train. When given the opportunity to work with the Tributary Food Hall & Drinkery in Golden, Co we surrendered to the flow of our love for meat & cheese. Mr. Miner’s Meat & Cheese is just that, beautifully cured meats & fine cheese sourced locally as well as internationally to create boards and sandwiches that personally make us drool.
We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
Well, we are a husband and wife running a business together, of course, there have been some bumps in the road and probably always will be when you have a devotion to a dream. But we’ve got our nice shades on and we’ll always be ready to run like an antelope.

At Mr. Miner’s Meat & Cheese we just want to create great food and surround our selves with great people. Simple, Fast, Enjoyable. We try to bring in the best ingredients we can get our hands-on. From worldly cheeses to locally crafted sausages we want items that excite us and hope to pass that excitement on to our guests.
So, what’s next? Any big plans?
We are a brand new shop, only being open a few months we have much to look forward to. We are thrilled to be a part of the Golden community and hope to become a local favorite. We hope to still be doing this twenty years later.
