Meet Tina Chon and Craig Field of Carbon Knife in Rino Arts District

Today we’d like to introduce you to Tina Chon and Craig Field.

Tina and Craig, please share your story with us. How did you get to where you are today?
We had been working in the restaurant industry for over a decade. We met cooking together in a local restaurant and have always shared the same love for Japanese cutlery. It was always a competition of who’s knife cuts were better and who’s knife was sharper!

While cooking in a professional kitchen, we seeked quality knives and tools to help us refine our cooking skills. But those things weren’t always so easily found locally. We’ve always had the dream to create a cooking store that grew with the culinary scene in Denver. In 2015, we started Carbon Knife Co, a chef-driven kitchenware store with a huge focus on hand-forged Japanese cutlery and whetstone sharpening.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
As a brick and mortar store, sometimes there are challenges competing with online shopping. But we are really grateful for the support of our customers.

Alright – so let’s talk business. Tell us about Carbon Knife – what should we know?
Carbon Knife Co is a chef-driven kitchen store and provides knife sharpening. Our hand-forged cutlery from some of Japan’s best blacksmiths. We want to make sure to educate customers on how to use these special knives and also how to maintain its sharpness. We also carry cookbooks, pasta tools, barware, specialty Japanese cooking tools. The sharpening services are also available for non-Japanese knives, as well. A sharp knife is a safe knife!

We are most proud to be able to represent these knifemakers in Japan and share their stories with our customers. It’s really important for us to be able to shake the hand of the person who makes your knife.

There aren’t enough words to thank the local chef community and continued support from our customers! It is what pushes us to keep working hard for everyone. We are truly grateful to have come this far!
