
Today we’d like to introduce you to Carol Mele.
Hi Carol, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
In 2012, I was in between jobs and wanted to do something different. I have always loved art and baking and was intrigued by Ace of Cakes and Cake Boss so I started playing around with decorating cakes. Soon after, I got my business license and a commissary kitchen and started taking orders. Business started booming and cakes were flying out the door. In 2014, I wanted to create an all-in-one dessert food truck that features our fresh made cupcakes, scratch-made ice cream, Macarons, cannolis, and much more. I have done cakes for The Colorado Rapids, The Colorado Avalanche, Pink and we did the desserts at club level at Mile High Stadium for all the Bronco Games.
We all face challenges, but looking back would you describe it as a relatively smooth road?
It’s been overall pretty smooth. However, I did have a little bump in the road. I originally started the company as Pink Zebra Cupcakes, and after a lengthy Naming battle, we rebranded as Lucky Mary’s Baking and Sweets Company. I named it Lucky Mary’s after my family. My grandmother’s name was Mary and My father went by the nickname “Lucky”.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I am most proud of my Cake art. I love sculpting beautiful pieces of art out of delicious Cake. I have a great eye for detail and love showing it on my cakes and desserts.
Do you have recommendations for books, apps, blogs, etc?
I love watching and learning from other great cake artists and love paying attention to the newest and hottest trends in the dessert world.
