Check Out Meg Antonczyk’s Story

Today we’d like to introduce you to Meg Antonczyk. 

Hi Meg, please kick things off for us with an introduction to yourself and your story.
The Breadery was just a dream for many years. Living in Crested Butte the options for a commercial space was slim and came along rarely. I got the opportunity to be a part of a restaurant co-op where I would own and operate breakfast/lunch and another business would own and operate dinner service. It was very tough sharing a tiny space, but even harder splitting the time. I would start my day at 3:30 AM to start bread and work through lunch service until 4 PM. We would have to break our line down every service and restart every morning for the dinner crew. I did that every day for a year until our lease was up and I moved into a larger space and switched to wholesale baking only. This was also a shared space with another bakery and this time we had the kitchen during nights only. Wholesale was a whole other animal and I quickly learned there are no profits in small-scale wholesale bread production. I definitely learned a lot during this time, especially the fact that I missed having a restaurant space. I did wholesale production for over a year until COVID hit and the business we were subleasing from shut down and we were unable to pay rent entirely ourselves. For a year we were just doing wedding and birthday cakes to keep the Breadery name afloat. We looked at a lot of leases and spaces, but they all ended up dead ends. In April 2021 we finally found our dream location after so many obstacles and Breadery 2.0 was born! 

Can you tell our readers more about what you do and what you think sets you apart from others?
Breadery specializes in sourdough. We don’t use any yeast, additives, or preservatives. It’s a sourdough and vegetable-forward concept based on Colorado seasonality.
