Today we’d like to introduce you to Julien Jeannot.
Hi Julien, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
I started my Culinary School in Nice, France when I was 14 years old; I learned every position from the Food and Hospitality Industry. Since then, I travelled a lot from France, Germany, London, Montreal, Las Vegas, California and now here in Lafayette CO. I worked in Michelin’s Stars Restaurant, really big Resort/Casino, in French Bakeries and a lot of other interesting Restaurants Groups. When the Pandemic started and I lost my job, it was clear for Teresa (my wife) and I to open our own place. Teresa has been working to some amazing Restaurant, Wine Bar and Catering Businesses. She knows all about the Front of the House including Sommelier witch is her passion.
We all face challenges, but looking back would you describe it as a relatively smooth road?
The food industry required a lot of hard work and countless hours. As much as we think we know a lot in this industry, there is one thing was really hard for us when we started our researches is “how to open a business?” The back of the Business has been very challenging like creating the Business Plan, finding Loans, and finding all kinds of businesses to help us with the remodeling of our place and administrative documents. Not to mention Staff and equipment shortage.
Thanks – so what else should our readers know about Jeannot’s Patisserie & Bistro?
We are a French Bakery & Bistro that we proudly do everything from scratch; from Croissants, to Hot Chocolate, Orange Juice, Brioche, Pain de Mie…, anything on our Bakery and our Bistro. The menu is a Very Classic French Cuisine, made with as many ingredients than we can resource locally. We focus more on the quality rather than quantity.
Everything is made daily, we have a variety of Croissants, French Cakes, Packaging (Meringue, Sablees, Chocolate Bark…) and a Brunch served all day until 2 PM. We will soon be open a few days a week until 7 PM to have a French Apero (serving Wine, Platters of Cheese, Charcuterie and other Salty Petit Fours)
Can you share something surprising about yourself?
Every day, someone start at either 4 or 5 AM to bake our Croissants.
