Community Highlights: Meet Rachel Guiberson of Colorado Charcuterie Cart

Today we’d like to introduce you to Rachel Guiberson.

Hi Rachel, please kick things off for us with an introduction to yourself and your story.
Audrey and I are sisters, business partners, and best friends—born and raised in beautiful Fort Collins, Colorado. As the oldest of five children, we grew up in a lively, close-knit household where family time meant everything. Some of our favorite memories are gathered around the kitchen, especially during the holidays, building charcuterie boards together. What started as a fun and delicious family tradition soon became a shared passion.

Today, life looks a little different—Audrey is a new mom, embracing the adventure of motherhood, and Rachel works full-time in software sales. But no matter how busy life gets, Colorado Charcuterie Cart is our passion project—something that brings us joy, creativity, and a way to connect with each other and our community.

That’s how the idea for our charcuterie cart was born—because we wanted to offer something more personal, fresh, and fun. Unlike traditional charcuterie spreads laid out on a table, our cart creates an interactive and engaging experience. Guests are served directly from the cart, making every bite feel special and adding a sense of movement and energy to the event. It’s not just food—it’s an experience!

And this is just the beginning—we’re dreaming big and hoping to grow this into a full-time business, allowing me (Rachel) to step away from the 9–5 and pour even more heart into what we love doing.

We all face challenges, but looking back would you describe it as a relatively smooth road?
Starting Colorado Charcuterie Cart definitely came with its challenges—mainly figuring out the credentials, permits, and logistics that come with launching a new, mobile food business. Neither of us had experience in this space before, so there was a learning curve when it came to navigating health codes, business licenses, and all the behind-the-scenes setup.

But once we got through that initial phase and shifted our focus to marketing and community outreach, the momentum picked up quickly. The response was amazing—leads started coming in almost immediately, and we were booking events!

That said, we know this is just the beginning. We’re still in growth mode and actively looking to book more events, reach new audiences, and expand what we offer. Every event helps us learn, improve, and move one step closer to our goal of turning this into a full-time business.

Colorado Charcuterie Cart is a mobile charcuterie experience serving just about all of Colorado. We specialize in creating beautifully curated charcuterie offerings served straight from our signature cart—bringing a fresh, interactive twist to traditional grazing tables.

We’re currently focused on elevating wedding receptions and cocktail hours, corporate events, and private parties. However, we’re open to any occasion because this cart is perfect for creating a unique and memorable experience at just about any gathering. Our cart is designed to be both eye-catching and functional, giving guests a fun, personalized experience as they’re served directly from the cart—rather than helping themselves to a spread on a table. It’s intimate, engaging, and ideal for making every event special.

What truly sets us apart is the experience and creativity we bring to every event—not just the food itself. We carefully design each charcuterie offering to be visually stunning and thoughtfully paired, turning every bite into a memorable moment. Through a lot of trial and error when creating our menu, we’ve found our favorite cheeses, cured meats, olives, fresh fruits/veggies, nuts, bread, etc. that are consistently fresh and delicious. We love seeing guests enjoy every bite—they always come back for more, which is the best compliment we could ask for!

Brand-wise, we’re most proud of the genuine, approachable energy we bring to everything we do. As sisters, best friends, and lifelong Colorado residents, we love connecting with our community and helping people celebrate life’s special moments in a warm, joyful way.

We have amazing support from our family and friends! A special shoutout to my fiancé, Jack, who stepped in to help out whenever Audrey couldn’t attend events—whether she was recovering from giving birth or busy caring for the baby.
