Conversations with Dylan Rigolini and Chandler Faragalli

Today we’d like to introduce you to Dylan Rigolini and Chandler Faragalli.

Hi Dylan and Chandler, so excited to have you with us today. What can you tell us about your story?
Parti was started in the midst of quarantine as a way for people to experience fine dining from their private residence. At the time all restaurants were closed for in-house dining, but we still wanted to provide the same level of food and service for guests. The option that made the most sense for us was to travel to people’s homes and cook for them privately.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall, and if not, what were the challenges you’ve had to overcome?
The roads in the food industry are always bumpy. We travel them as best we can, but there are always challenges. Our biggest hurdle right now is finding a brick and mortar to move the concept to.

Appreciate you sharing that. What else should we know about what you do?
Typically, a night with Parti will include a 10-course dinner consisting of small bites, larger entrees, and desserts. We charge a flat rate of $175 per person. There are optional wine pairings if our guests chose to participate. We draw most of our inspiration from France, Italy, and the American south, as well as many Michelin restaurants around the world.

If you had to, what characteristic of yours would you give the most credit to?
Taking nostalgic flavors and presenting them in a more contemporary light. We stay true to our roots and cook what tastes good, but we are always thinking of ways to be creative with those flavors.
