Conversations with Ricky & Kelly Seepaul

Today we’d like to introduce you to Ricky & Kelly Seepaul. 

Hi Ricky & Kelly, we’d love for you to start by introducing yourself.
Leaving most of my family behind to start a new life, I migrating from the West Indies. It was the mid-’80s and I was 17. On the weekends I was a DJ in Miami and by day, I was working my way up to being a cook at a busy bagel shop. As time went on, I ended up in Evergreen Colorado where I met my wife, Kelly. Working many years at the local restaurants in town we built up a love for food & entertaining. As we cultivated our place in the community, we desired to have a restaurant of our very own. After refinancing our home, we scrounged up just enough money to start building our dream. Rickys Island Style Cafe (Food Truck) is our combined creative vision and it allows us the opportunity to nurture our community with good food and good vibes. 

Would you say it’s been a smooth road, and if not, what are some of the biggest challenges you’ve faced along the way?
Having a dream was the easy part. And fortunately for us, we had already made a lasting impression in town. However, there are a few challenges when working in a food truck. One of the biggest challenges we face is the weather. And working in the cold Colorado Rockies is not an easy task. And let’s not forget that working with your spouse in a confined space can also be challenging. And every day is a task just to keep up with today’s demands. But when you love what you do it makes it more manageable. 

Appreciate you sharing that. What else should we know about what you do?
We aren’t your ordinary food truck! At Ricky’s- we offer a global menu with a heavy West Indian influence. 

Alongside our delicious artisan coffees & smoothies, you can get a custom-made breakfast scramble or burrito. 

For lunch, we cater to all palettes with a wide range of rice bowls, sandwiches, and more! We even offer gluten-free fish with homemade island chips! Try one of our specialty dishes “The Village Bowl” Made with a yellow style curry from Trinidad- RICKY’S homeland or Kelly’s Coconut Shrimp Wrap. 

Top these off with our homemade habarnero pepper sauce and taste the flavors that will keep you coming back for more. Rickys Island Style Cafe brings the island life right to you!
