Daily Inspiration: Meet Justin Freeman

Today we’d like to introduce you to Justin Freeman.

Hi Justin , it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
My love of food all came from my family. My mother would cook for me and my brothers everyday night growing. She would cook everything you can think of. There was a lot of experimenting. My parents and grandparents should be what it meant to show love and appreciation through the act of sharing through food and hospitality.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
The road has been bumpy for sure. We have have good nights and some bad nights at Monarch. The whole process of my cooking career has been based on what I have believed in at that time in my life. It’s brought a lot of joy even when it has been difficult.

Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
I like to think of myself as a creative/craftsman where I get to work with my hands everyday. I get to make pizza everyday and work with some of the best ingredients that I can source locally from other Colorado craftsman. At monarch we create new menus every week. Where we get to build on the relationships with Colorado’s farmers and ranchers every week. Monarch is a place where we want others to put down there phones and start taking again. Get excited about what and who is in front of you. Talk and connect about old memories or smells or maybe even ingredients that bring you back to a special place

If you had to, what characteristic of yours would you give the most credit to?
A big quality/characteristic is just being genuine. At Monarch Denver we are just trying to be ourselves. Big bold flavors and we aren’t apologizing for it. We want to try and just be us let our guards down and just talk with you. Tell you what excites us at that moment or what we are feeling. And we want to hear that from our customers as well.
