Hi Tracy, thanks for joining us today. We’d love for you to start by introducing yourself.
My love for cooking began when I was just 12 years old, spending time in my mother’s kitchen. Cooking quickly became a passion of mine, something I found joy and comfort in. As the years went by, I continued to experiment with recipes and techniques, but it wasn’t until the COVID-19 lockdown that I truly realized the potential of my culinary skills.
With schools closed and everyone stuck at home, I found myself with a lot of free time on my hands. Cooking became my escape from the monotony of lockdown life, and I decided to try selling my homemade dishes to friends and neighbors.
To my surprise, people loved what I made, and that’s when I knew I might have something special on my hands. There were definitely challenges! Sourcing ingredients, navigating health regulations, and building a customer base were just a few of the hurdles I encountered. But I’ve always been determined and resourceful, so I tackled each challenge head-on. I sought advice from other entrepreneurs, did my research, and never gave up on my dream.
Moving to Colorado, I noticed a lack of authentic Nigerian food in the area. It was frustrating not being able to find the flavors of home in my new community. That’s when I realized I had an opportunity to fill that void and introduce people to the rich and vibrant tastes of Nigerian cuisine.
IMEMARIE means “I will eat” in the Igbo language, reflecting our commitment to providing delicious meals that everyone can enjoy. I want to expand our menu, reach new customers, and maybe even open a brick-and-mortar restaurant someday. My ultimate goal is to make Nigerian food accessible to everyone, regardless of where they come from. Food has a unique ability to bring people together, and I’m honored to be a part of that experience.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Absolutely, it hasn’t been a smooth road at all. I’ve faced numerous challenges along the way. One of the biggest struggles was sourcing authentic ingredients. Many of the ingredients I needed for my recipes weren’t readily available in Colorado, so I had to get creative and sometimes even order them online.
Coordinating shipments and ensuring the freshness and quality of the ingredients from Nigeria were additional challenges. There were logistical hurdles to overcome, such as customs regulations and shipping delays. Despite these challenges, I was determined to bring the authentic flavors of Nigeria to my customers in Colorado.
Another challenge was getting people in Colorado to try Nigerian food. There’s often a hesitation to try something new, especially when it’s from a culture they’re not familiar with. Breaking down those barriers and convincing people to give Nigerian cuisine a chance took a lot of effort and perseverance.
Additionally, breaking into the food industry as a Nigerian in America presented its own set of obstacles. There’s a certain level of skepticism and doubt that comes with being an outsider in an industry dominated by a different culture. I had to work twice as hard to prove myself and earn the trust and respect of my peers and customers.
Overall, it’s been a journey filled with ups and downs, but overcoming these challenges has only made me more determined to succeed.

Another highlight was being recognized by the renowned chef Hilda Baci, a Guinness World Record holder, as one of the winners of her prestigious cooking class. This recognition not only validated the quality and creativity of our dishes but also served as a testament to our commitment to excellence in the culinary arts.
