Hi Esther, thanks for joining us today. We’d love for you to start by introducing yourself.
My journey began not just at birth, but at a threshold moment when I was thirteen—when I had to choose between ending my life or discovering the truth of who I am. That moment became a portal. I grew up as the “black sheep,” shaped by trauma, yet guided by an innate hunger for meaning, creativity, and healing.

Art and food were my first medicines. I put myself through art school cooking for others—creating multi-sensory experiences that celebrated culture and nourishment. Over time, that evolved into a thriving catering company, a bakery, and eventually into deeper studies: I earned a master’s in nutrition, dove into Chinese medicine, somatic therapy, polyvagal theory, and plant communication. Nature became my greatest teacher—a space that held my grief, mirrored my truth, and taught me to listen.

I learn to listen to the body’s intelligence and understand the conversation between the gut, heart, and mind —how thoughts, beliefs, ancestry, and energetic expression become concretized in our physiology and biography. Symptoms and illness became a map pointing toward disconnection: from ourselves, from our nourishment, and from our truth. My work now is to help people reconnect—through deep listening, nutrition, embodiment, and creativity. Healing isn’t about fixing; it’s about remembering our own holy intelligence.

BIO:

A true pioneer in the field of the Psychology of Nourishment, Esther Cohen is a master herbalist, gifted energy healer, registered dietitian, and BodyTalk Practitioner. Her dynamic holistic approach to health, wellness, and healing integrates nutrition, western and eastern healing modalities, functional medicine, energy healing, herbalism, shamanism, and a psycho-spiritual approach to disease and dysfunction. As a sports nutritionist, Esther has helped elite athletes achieve their performance goals through individualized nutrition programs as well as performance sessions with BodyTalk to help them overcome sports anxiety.

Esther is passionate about educating her clients and empowering them to create a life of true health, vitality and purpose. Her work facilitates the awareness of unconscious belief systems that manifest as our symptoms and dysfunctions. Her unique and dynamic perspective on nutrition encompasses the whole person — food, relationships, lifestyle, sense of purpose, and self-expression — essentially everything we take in.

Esther has a Masters in Science in Human Nutrition from Colorado State University and is working towards certification in functional medicine from the Institute for Functional Medicine. In 2003 she earned her certification as an intuitive counselor from the National Institute of Alternative and Complementary Medicine. After years of training, Esther became a certified BodyTalk Practitioner and Matrix Energetics Practitioner.

Esther has combined her science and nutritional background with her energy healing skills, she facilitates change in her clients at a deep and lasting level. As one of the leading sports nutritionists in Boulder, her individualized approach fosters a strong partnership that allows magic to happen. Esther’s passion for what truly nourishes lays the foundation for guiding individuals in a healing journey to a life that deeply feeds their soul.

Esther has been in private practice for over 30 years and is the founder and director of the Nourishment Education Foundation, and the Seven Bowls School of Nutrition, Nourishment and Healing. As an eating psychologist, Esther spent years working with Eating Disorders and Addiction, and co-designed the first Eating Disorders Program at Kaiser Permanente, Colorado. She is an author of several nutritional guides and articles. Her training as a professional chef incorporates her love of organic, delicious and healthy cooking. Esther has taught extensively at numerous colleges and universities including Naropa University, University of Colorado, and SouthWest Acupuncture College. She lives in the enchanted foothills outside of Boulder, Colorado, and is the mother of two lively daughters. Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Belonging was my deepest wound and greatest quest. That led me into a conscious community that became more cult-like than supportive. I’ve experienced the pain of being othered, silenced, misunderstood—but also the refining fire of it. It gave me empathy, discernment, and a fierce commitment to freedom and truth.

The road hasn’t been smooth—from single motherhood, to academic systems that rejected my non-linear thinking, to institutions that ignored grassroots healing efforts like my project in Flint, Michigan. But every obstacle deepened my devotion. I’m not here to fit in. I’m here to help others remember who they are.

I support individuals in re-aligning with their true essence through functional nutrition, somatic work,
archetypal inquiry, and deep listening. I integrate Chinese medicine, the neuroendocrine system, herbal medicine, and creative expression. I help people transform trauma into power, not just through analysis, but through the body’s wisdom and the soul’s language.

I’m known for weaving together art, science, and spirit into a healing tapestry unique to each person. From mystical theatrical rituals and nourishment-based programs to my books and school, everything I create is about coherence—within the self, and with the world.

My work honors individuality and intuition. It’s not about generic healing—it’s about your blueprint, your voice, your nourishment. I don’t believe healing takes years of talk therapy; when we work with the body’s intelligence and the soul’s truth, change can be immediate and lasting.What makes it unique is the integration: I’m an intuitive listener, a clinical nutritionist, a creative guide, and a community builder. I’ve helped people move through everything from cancer to autoimmune disease—not by “treating” them, but by helping them become coherent with who they truly are.

Giving voice to the symptoms this where healing begins with re-establishing relationship—within the self, with nature, with our voice, and with what truly nourishes us. Authenticity is a biological necessity. Autoimmune disease, especially in women, is a signal: we’ve given away our power, and lost clarity about who we are. Healing is reclaiming that clarity—not in a performative way, but with deep listening, self-belonging, and soulful patience. This is sacred work. And it’s urgent.
