Hi Jonathan, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
It seems like yesterday how it all started, a high school kid trying to make a couple extra bucks by selling chips and guacamole to classmates. That hustle would eventually grow into something far greater, after high school, Taco Bron food truck was created featuring authentic Mexican street food and New Mexico style food and hit the road. We have been traveling across Colorado to bring people the Taco Bron Experience. Every year in business we have had the opportunity to refine our craft, sharpen our cooking skills, and perfect our recipes along the way.
Our hard work paid off. We became recognized as one of the top food trucks in the state and we were selected to compete on national television show from the Food Network. Our reputation started to get notice and so did our fan base.
We’ve cooked in professional studios, proudly sharing the recipes we’ve spent years perfecting.
Creating great recipes requires high-quality ingredients, persistence through trial and error, and unwavering passion for cooking.
Our travels around the world have taught us valuable lessons, helping us continuously improve our food. Whether it’s opening a restaurant, hosting events, or participating in culinary competitions, each experience has added depth to our craft.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Starting a food truck at 19 I ran into hurdle after hurdle. Struggles include getting my name out there. Convincing breweries/bars to book me. Then the struggles with staff, building a reputation that creates respect from those older than me in the kitchen. Finishing my bachelor’s degree while running the food truck at night and on weekends. Learning what it means to actual own a business and figuring licensing, taxes, permits, etc. I made a lot of errors on my way up, but each taught me something I value today.
Alright, so let’s switch gears a bit and talk business. What should we know?
Taco Bron is a Colorado native business, minority-owned. We strive to give everyone the opportunity to try our food. We know tacos can be simple so we place all of our focus into the quality of the ingredients as well as the procedure. We have custom tortillas of nixtamal, we honed our flavors and marinades over the years and travelled around the world to learn where we can improve our recipes.
Our attention to detail sets us apart from other taco places.
We are best known for our Al Pastor tacos, our beer-battered fish tacos, and our salsas.
We have been featured on the Food Network and local news networks several times.
Where do you see things going in the next 5-10 years?
I see the food truck industry and growing quickly. Currently we’ve been seeing a lot of issues with unlicensed food trucks, but there has been a shift in focus to this and I see it being easier to get licensed to avoid these issues. As Denver continues to grow, the real estate in downtown is still priced too high for restaurants so I see more food trucks opening and the quality of food truck food improving exponentially
