Today we’d like to introduce you to Linnea Boyd.
Hi Linnea, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
I started out with a farmer’s market bakery stand in 2014 in a southwestern suburb of MN. It quickly turned into our dream of a family business. In 2015 Ruby’s Roost Bakery & Coffee was born with my husband and three daughters. The fresh baked organic pastries and traditional espresso drinks that we made quickly became a staple in the community and beyond. Although with our adventurous spirit, in 2021 we sold Ruby’s and headed west. We started up a new location in the black hills of SD for three years, but as time went on I began to crave the energy of the city as well as the beauty of the Rocky Mountains. So in 2025 we decide on Boulder, Colorado for our next place to settle. After months of searching for a coffeeshop location, the perfect spot presented its self and Pearl Street Coffee was born! It’s an absolute gem of a location that fits my new redesigned style and business plan exactly. I love creating a clean comfortable environment that feels like home. A place to enjoy conversation and laughter with friends and family. I am baking on a much smaller scale here to just provide daily pastries enjoyed in house with coffee, tea or a mocktail. Some favorites are cardamom rolls, coffee cakes, scones and cookies. I love to bake items that pay tribute to my Scandinavian heritage! I will also be introducing the delicious flavor of Fika Coffee, our roaster and friend out of the north shore of Lake Superior in Grand Marais MN. I am so excited to get to know the community and become a part of the wonderful small business world of Colorado!
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
In the big picture it has been a smooth road to opening. Of course there are always bumps along the way that slow you down a bit, but maybe for good reason! I am very grateful for all of the people who have been a part of the process, from hands on to encouraging words!

We are a new Coffee Shop in Boulder, Colorado with 10 years of experience in creating a warm and inviting atmosphere with delicious high quality coffee and pastries. Pearl Street Coffee is in a great location to park free, walk to or ride your bike from anywhere. We make all of the traditional espresso drinks, loose tea, tea latte’s and functional mocktails. We make a variety of baked goods to enjoy in house. As well as provide light food options for breakfast and lunch.

I have a horse. I love the gentle spirit of horses!
