Today we’d like to introduce you to Aaron & Meagan Shockley.
Hi Aaron & Meagan, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
The Rolling Fork was a 10-year-old dream born in the midst of a pandemic. My wife Meagan and I (Aaron) had our first-born son Jettson in February of 2020. As you all know, COVID was just becoming a “thing” in the United States. Shortly after he was born, my full-time job called and informed me that I would be staying at home for a little over 3 months while they attempted to sort through the restrictions we would come to know all too well.
Being new parents, this was a relief to us both. More time with our little boy! Boredom was something we did not anticipate.
As we both scrambled to babyproof our home and figure out how this whole parenting thing worked, we found ourselves daydreaming more and more about starting something meaningful that could support our new family and thrive within our community. All I could think about was an old but not forgotten dream of mine – a food truck!
We spent countless hours flipping through pages on Craigslist & Facebook Marketplace looking for the perfect truck for our ideas. At last, she was found! The perfect truck. Now for a name… we’ll, we live in The Roaring Fork Valley… how about The Rolling Fork! I must admit, this was all Meagan. What a clever name!
We spent hours drawing out logos and designs for our new truck. Sharpie and printer paper turned into a brand over the following months. A brand that represents the love we have for our community. Working with local farms, providing our first responders with free meals, feeding our teachers throughout the valley, and spreading love by doing something that makes us happy!
Our menu is a constant rotation of locally sourced and in-season products that allow us to support our local economy. We do everything from Elk burgers, tacos, fried chicken, ahi tuna, beef tenderloin and so much more. What we’ve become known for is our Almost Famous Fried Chicken Sammy – a hand-breaded chicken breast drenched in our house-made Shock Sauce on Texas Toast. If we don’t have this available year-round – we’re in trouble with our guests!
It’s been a little less than two years, we have a second food truck “The Dark Side of the Fork” our play on good vs evil, my brother Jobe is now our full-time Sous Chef, Meagan and I have made this our full-time jobs. Life is good!
We are hired all over the Western Slope of Colorado for weddings, company parties, school functions, carnivals, birthday parties – you name it, we’ve done it!
Our newest adventure is very exciting for everyone in Denver Colorado! We are working with Meow Wolf to provide them with our “Rolling Pies” a variety of whoopie pies including our favorite – Pryde Pie! This sparkling whoopie pie is rolled in fruity pebbles and is sure to scratch that sweet tooth itch we all can’t ignore.

Would you say it’s been a smooth road, and if not, what are some of the biggest challenges you’ve faced along the way?
Our biggest struggle was figuring out how to navigate our personal lives in the midst of a pandemic. Being new parents, it was pretty scary stuff. How can we keep our son safe? Will our new business be affected by the restrictions? A seemingly endless stream of changes by the state and local health departments kept us on our toes for sure.
Ultimately – this all lead to our success. All of our products were served to-go anyway, so we could operate our business as normal. We ended up taking over a lot of the catering space because it was Covid friendly – no buffet lines!
Great, so let’s talk business. Can you tell our readers more about what you do and what you think sets you apart from others?
We are a Food Truck based around the Glenwood Springs area of the Western slope of Colorado.
We set ourselves apart by focusing on what products are locally available and in season. Keeping the food fresh and far away from large distribution companies gives us the opportunity to provide our community with farm-to-truck-style food!
Our catering is our bread and butter – we bring the truck to you, cook each meal to order, and provide our guests with a flavor experience they can’t get anywhere else. Ditch the buffet line and Get Forked!
Our slogan “Get Forked” really makes us stand out for obvious reasons. It’s on our trucks, T-shirts, website, hats, and all sorts of merchandise. We love the smile it brings to people’s faces when they see us driving around the valley!
What do you like best about our city? What do you like least?
Our situation is unique – we service Glenwood Springs, New Castle, Silt, Rifle, Carbondale, El Jebel, Basalt, Aspen, Eagle, Vail, and down to Grand Junction.
We love our ability to visit so many different towns in such a small area – however, each town has its own set of licensing, rules, and regulations. This can be exhausting to keep up with!
