Today we’d like to introduce you to Edlyn Ferreiro
Hi Edlyn, thanks for joining us today. We’d love for you to start by introducing yourself.
Started 4 years ago in Winter Park, CO as a food truck during covid. I was working at Fraser River Beer CO brewing beer and bartending. When Covid happened, breweries could not stay open without serving food. I am originally from Baja Mexico and always craved authentic Mexican street tacos after a day of snowboarding. So I opened up the food truck and here we are today.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Everything happened so quickly. Covid shut the world down and two weeks later we were open for business. Everyday was a new adventure/challenge. I also found out I was pregnant with my first after a month of being in business. So when I say everything happened so quickly it really did. Trying to balance a new business, motherhood and not completely loosing who I am is one of the hardest things I’ve ever had to go through.
Now that we have a brick and mortar in Boulder County, as anyone who is in the industry knows, comes with it’s own set of challenges. Water pipes bursting, food cost increases, bills and so on. But we are thankful for the opportunity that we have and have hit the ground running.
Thanks for sharing that. So, maybe next you can tell us a bit more about your business?
We started as a small food truck in Fraser Colorado 4 years ago. I was always craving some street tacos after a day snowboarding but that just wasn’t available in our small mountain town. The idea for Shreddy’s Tacos came about when COVID happened. I was working at a Fraser River Beer CO and the law at the time was that the brewery could not be open unless they served food. I mentioned in passing that I had always wanted to open a taco truck. Two weeks later we were in business.
We specialize in authentic Mexican street food. About 8 months ago we opened a brick and mortar in Boulder Colorado. I am so proud of what has transpired the last 4 years. We were so well received in Grand County winning numerous rewards for Best of Grand County as a food truck since opening. I wanted to bring my Mexican culture and fuse it with the snow/skate/surf culture I hold so dear and shaped me into the person I am today.
When the opportunity to open an actual restaurant in Boulder presented itself, we jumped at it. Being a first generation immigrant from Mexico I am proud to be able to offer delicious food to the community. I did this for my parents and for my own little family. Being open for only a couple of months we earned awards from Boulder Taco Fest 2024: 3rd place for Judge’s Choice Best Taco and 2nd place for People’s Choice Best Taco out of 20 participants. Not bad for being the new kids on the block!
What do you like and dislike about the city?
I love how welcoming the community of Boulder has been. I love how close we are to the mountains and Eldora is only 30 minutes away. We are still able to keep our Mountain lifestyle.
I don’t like how expensive housing is but that’s really anywhere nowadays.
