Today we’d like to introduce you to Morgan Burckley.
Morgan, we appreciate you taking the time to share your story with us today. Where does your story begin?
I have always loved the Hospitality industry and helping create an amazing experience for each and every guest who walks into our building. I started with The Post Chicken & Beer back in 2017, when we were still The Post Brewing Company, and was able to move up into management.
During COVID I helped run our Lafayette location with minimal staffing and some amazing hands from our sister Big Red F Restaurants. Once restaurants started to settle into their new normals, I was lucky enough to jump around and manage the other 3 original Post locations; Longmont, Rosedale, & Boulder. I was also lucky enough to help open 2 of The Post’s new locations; Estes Park, in July 2021, and Fort Collins, in October 2021.
After the opening of The Post – Fort Collins, I stayed on as the General Manager with an incredible team until given the opportunity back in October to GM our original location in beautiful Lafayette. The last 7 years at The Post have been truly a blessing and an amazing career growth opportunity. I am so excited to be back at my home store to help teach the new minds of Hospitality and continue to create amazing experiences for our guests.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
COVID posed a large challenge, as it did for most restaurants. Working to create a safe environment for our staff and our guests was our most important priority. A close second was refocusing our menus to be the most successful for take-out and delivery posed some interesting challenges but ultimately we were able to fine-tune that over time.
As you know, we’re big fans of The Post Chicken and Beer. For our readers who might not be as familiar what can you tell them about the brand?
The Post Chicken and Beer opened 10 years ago and has slowly grown to reach 7 Colorado locations. We specialize in gluten-free fried chicken, comfort cuisine, and sessionable award-winning beer. Our gluten-free fried chicken absolutely sets us apart. Alongside having a large gluten-free menu we pride ourselves on being allergy-conscious so our guests can feel safe and comfortable dining with us.
Can you share something surprising about yourself?
When The Post was in the creation/ menu testing phase, we were not aiming to have a gluten-free restaurant. Our co-owners, Brett Smith and Dave Query were testing out anything and everything that could be used for breading on fried chicken, and out of 50 recipes used, the winning recipe just so happened to be gluten-free. Now we have slowly adapted our recipes and menus to be more and more gluten-free friendly.
