Today we’d like to introduce you to David Collector.

Hi David, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
Stick Around is a family-run business based out of Boulder CO. My wife and came up with the idea for Stick Around just by eating at food trucks in Colorado. We wanted to offer a different take on something that’s all over the place. BBQ. We both had been working in restaurants for ten years and were ready for a change. And then the pandemic hit and we were thrown into this idea head-on.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Nothing in the food industry is smooth. We started in the thick of the pandemic, so we had to adapt immediately. The biggest struggle was just how different food trucks are from actual restaurants. A lot of different moving pieces in comparison, aspects we never had to think about in a restaurant.

Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
We specialize in everything on a stick! We wanted to do something different and landed on Skewers. Every culture around the globe has a variation of a skewer. We go from region to region and change our menu based on where we are highlighting. We offer a classic American menu, Mexican, Mediterranean, South Pacific, Caribbean, and Asain-influenced menus.

What do you like best about our city? What do you like least?
Colorado in general has so much to offer that we love, from hiking, fishing and skiing, to Denver’s wonderful art scene. The only thing we dislike is I -25. Just because pulling a 9k # trailer down the interstate is not our most enjoyed activity.
