Meet Julie Hay of Winter Park

Today we’d like to introduce you to Julie Hay.

Hi Julie, so excited to have you with us today. What can you tell us about your story?
We purchased Rollin’ Street Bakery during Covid 19. It had been our favorite go-to eatery as a family, and we had gotten to know the staff well.
Since I come from a family full of bakers – mom, sister and two aunts – it seemed natural for me to want to step into a baking role. Rollin’ Street Bakery, however, differs from traditional American bakeries. Its European style cuisine originates from a famous street – Rollin’ Street – in Prague. For me, the Bakery introduced a whole new baking and culinary experience. It proved to offer a challenging, yet exciting learning curve. We were given and learned how to use the recipes from the former owner, and, over time, we have been able to add our own flare. It’s been a joy to serve our community the last five years. We change our menu often to keep things fun and offer a wide range of made-from-scratch products. Owning one’s own business can be both a blessing and a curse. The most important and busiest days are holidays, weekends and highly favorable ski-weather days. During those days I miss family time, but we try to make up for it during the slower periods of the year. Without question the greatest fulfillment comes from being part of a great, close-knit work team. All of us love to serve our customers and help make their day in Winter Park a little bit sweeter. We keep learning and growing together and we wouldn’t want to have it any other way.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
There have been hicups over the years but thats were you learn.

I think the biggest hurdle is when you take over an existing business and try to find where you are in the mix. It took a good two years to get the hang of seasonal challenges and figuring the ins and out of the bakery. We have really enjoyed each challenged we have faced because it has led us to where we are today. We have a wonderful staff and a fantastic menu.

As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
We serve food. With food comes flare. You can create anything you want. We are known for our European style chimneys that are pastry dough wrapped around a stick and then cooked over a fire. We have sweet and savory options; ranging from stuffed savory chinmeys filled with breakfast/ lunch to sweet ones filled with ice cream. These are special, fresh and rare to find in the states. We make these fresh daily starting at 6am. We offer other bakery items in additon but our prized posseson is our chimneys.

If you had to, what characteristic of yours would you give the most credit to?
You need to go with the flow. Being able to adjust is a huge deal with guests that come in and also the team you work with. Customer service is huge. Making people feel vauled is my main goal. Serving delicous, fresh baked goods and being a part of our Rollin’ family while there is what i strive for.
