Today we’d like to introduce you to Julien Jeannot.
Hi Julien, please kick things off for us with an introduction to yourself and your story.
I started my Culinary School when I was 14 years old, made my training in France, then Germany, London, Montreal, Las Vegas, California to now Lafayette Colorado. Each places have been so different from Restaurants, to Hotels, Casino, Bakery, catering. I learned different techniques and cultures that is very important for what we do.
We all face challenges, but looking back would you describe it as a relatively smooth road?
Nothing is easy in the food industry, but the most difficult part is to learn how to run the back side of a business. Both my wife and I has been working in this industry for about 20 years, but never really had to hired Contractors or knew what are all steps to open a Restaurant.
As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
We specialize in French Breakfast Pastry, Petit Gateaux but we also have a Bistro and served Brunch all Day, we do most of French Classic Dishes and are now Open in the evening to serve Aperitif, a French way to serve Wine with small Appetizers, Cheese and Charcuterie Boards. We are so proud of serving dishes and culture from France, especially the south, where I come from. We have a whole set of serving “Ricard”, it is a very special Drink that is so underestimated in the US, we are so excited to share this in our place.
We love surprises, fun facts, and unexpected stories. Is there something you can share that might surprise us?
From the time we got the key to the time we open our doors; it took us one and a half month. No one around us took us seriously. We did it!
