Gustavo Mejia Alfaro shared their story and experiences with us recently and you can find our conversation below.
Gustavo, so good to connect and we’re excited to share your story and insights with our audience. There’s a ton to learn from your story, but let’s start with a warm up before we get into the heart of the interview. Are you walking a path—or wandering?
Many before me have achieved great things and become pioneers, challenging norms and setting new standards. I feel I’m able to use their paths to navigate my own, while also forging a new one.
I started as a busboy when i was 14 and have remained in the industry ever since. Working every position in the kitchen, from washing dishes to my current role as Chef de Cuisine I’ve had the opportunity to learn from personal experience and those around me.
I am from Honduras and part of the DACA progam something I’m very grateful for. I have set myself on a path to develop myself as a Chef of a restaurant that earn a Michelin star. I strongly believe that I am carving a path previously unseen for people who share my background.
Can you briefly introduce yourself and share what makes you or your brand unique?
My name is Gustavo Mejia, and I was born in Honduras. I grew up in Colorado but now reside in Chicago, where I am the Chef de Cuisine at a unique restaurant called Esme.
Esme is canvas, an art-driven restaurant where we use our space as a platform for local Chicago artists. We offer them a five-month residency, and together, we spend many hours over up to three months curating the dining experience. Everything from the music, lighting, food, plate, and art on the walls is a collaborative effort. This is a unique experience for me, as I grew up spending many days drawing. It’s truly special to be in a space that embraces creativity and art, using it as a medium for our own creative expression and exploration of ideas resulting in a truly unique experience for our guests.
Appreciate your sharing that. Let’s talk about your life, growing up and some of topics and learnings around that. What breaks the bonds between people—and what restores them?
I strongly believe that transparency, genuine intentions, and clear communication about one’s needs and concerns require significant self-discipline. These are principles I’ve embraced to become a better version of myself.
The more I focus on self-improvement, the more I’ve been able to connect with the right people, leading to meaningful relationships in both my personal and professional life.
If you could say one kind thing to your younger self, what would it be?
Keep going, its all going to be worth it.

It’s crucial to maintain your cultural heritage as it continuously evolves. It plays a role in your identity and values. You can incorporate other cultures and make an effective society.
