Hi Tawnya, so excited to have you with us today. What can you tell us about your story?
My journey began in 2009 when I moved to Mexico as a young adult. I have always had a taste for traveling and adventure. I spent most of my 20’s living in Mexico and I met my now husband there in 2013. In the fall of 2014 we took a three month trip to South East Asia with my sister and her husband. We got to really immerse ourselves in to different cultures and really see how people lived. While we were in Thailand, we found a unique “waffle press” at a night market. We were intrigued by the long line of people, as well as how delicious the products were. It was a corn dog shaped, churro flavored treat. We made a mental note of it and moved on. Months later while back in Mexico, we came across a similar waffle press and knew it was a sign. We purchased multiple irons from Thailand and began our Wafflerita Journey. We started playing with different types of batter, from crepe batter to pancake batter and eventually decided to make our own. While we were in that process I thought, well this is on a stick, why not put things on the stick and stuff them? And that is what a Wafflerita is- a hand stuffed waffle on a stick. We started with 3 flavors and now we offer 6 flavors, 3 sweet and 3 savory. We moved the business from Cancun up to Denver, CO in 2017 and have been growing rapidly since. We now have two petite food carts, we specialize in private events such as corporate, weddings, birthdays and graduations and we also participate in Farmers Markets.

We all face challenges, but looking back would you describe it as a relatively smooth road?
It has been a rollercoaster of a journey so far. Opening the business in a foreign country had plenty of struggles on it’s own, but we prevailed! As we came to Denver, it took us a few years to find our niche market. We started advertising on social media platforms to get our name out, and did public events like HOA’s, and breweries. Now we are pretty much fully booked with private events! We are still facing struggles with finding the right team players but the few team members we have really take a lot of my plate and keep the business running smoothly.

We’ve been impressed with Wafflerita , but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
We are a catering company that specializes in handmade, artisanal stuffed waffles on a stick. We have sweet and savory options. We focus on private events such as weddings, birthdays, graduations, corporate and school functions. We cater events of all types and sizes. We are one of a kind, and looking to expand to other cities soon.

Our mission is to bring people together, sharing smiles, flavors and the joy of community, one delicious bite at a time.

Where do you see things going in the next 5-10 years?
As we have now been in business for 7 years we have seen some shifts in the catering industry. We are very versatile and able to pivot when needed. Over the next 5-10 years I see the catering industry growing. People are always looking for new and unique types of food to bring to their events. I have found that the larger the event, the less the host wants to cook or manage the food so we are in a great spot living in a large city to have the constant demand.
