Community Highlights: Meet Yadira Mendez leiva of Flavor of Tabasco

Today we’d like to introduce you to Yadira Mendez leiva.

Hi Yadira, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – start maybe you can share some of your backstories with our readers?
Six years ago being a single mom, working two jobs, and going to school wasn’t enough to pay the bills. I started advertising my homemade Tamales on Facebook, I discovered that if I sell my tamales 1 day a week that I was able to pay my rent and I started thinking about the idea of opening a food truck, I have been living in Colorado for almost 23 years but I still remember the days that my auntie would write a recipe for me to cook before she went to work ( I was only 13 years old.)

I met my husband Michael Mares that introduced my tamales to his friends. They started buying every week as well. We started talking about my idea of opening a food truck.

We planned for three years, suddenly we decided was time to do it. We opened at the start of the pandemic but we have been very successful during our first year. We have been truly blessed. All of my boys have been able to help out with the business as well. It takes hard work and honesty.

I feel good any time my customers come to the window and give me a good compliment about how much they enjoyed the food.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
The most struggles have been learning the business, finding the places to park, finding employees, food cost ( very high), time-consuming ( shopping different stores finding better deals ).

We’d love to hear about any fond memories you have from when you were growing up?
My grandma had chocolate and tamales. My mom always giving away food to the neighbors and my dad workers. (My mom passed away when I was 9 years old so everything was very hard after that.)

I have two sisters and two brothers that we got separated after my mom passed away and I haven’t visit for 23 years.

We are planning a trip this coming winter so I can spend time with, my sisters and brothers, they are all in Tabasco Mexico.
