HipPOPs began in 2012 with founder Tony Fellows and one bold idea: take premium, handcrafted gelato made with fresh, high-quality ingredients and traditional Italian techniques — and put it on a stick in a way people had never seen before. After countless recipe adjustments for perfection, and the launch of what HipPOPs followers (aka “POPfans”) proudly call the “World’s Coolest Dessert Truck”, HipPOPs quickly built a loyal following drawn to its vibrant flavors, eye-catching presentation, and fully customizable desserts. What started as a single POPtruck evolved into a brand known for turning dessert into an experience, blending creativity with high-energy hospitality that makes every guest feel like part of the fun.
Today, HipPOPs is best known for specializing in corporate dessert catering — bringing a fresh, interactive twist to meetings, conferences, employee appreciation events, product launches, and client celebrations. Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
One of our biggest ongoing challenges has been balancing rising food and supply costs while still keeping HipPOPs accessible and competitively priced for our customers and corporate partners. As a mobile dessert business, we’ve also had to fine-tune a concept that operates in constantly changing environments — weather, permitting, power access, traffic flow, and venue logistics all affect how and where we can serve, and every event brings a new variable to solve in real time. At the same time, we’ve grown quickly, and maintaining a consistently high-quality product and guest experience across more trucks, more staff, and more events has required relentless training, smarter systems, and a refusal to cut corners. Each of these pressures has forced us to evolve, and while the adversity has been real, it’s also sharpened our focus on efficiency, innovation, and delivering an experience that’s worth coming back for.
As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
At its core, HipPOPs creates unique & interactive, handcrafted gelato experiences — and what we specialize in is executing them flawlessly, especially here in Denver. We’re known for turning dessert into a show: from our interactive 3-step process to our show-stopping POPtruck and indoor POPup Gelato Bar experience. What many people don’t see is that behind the scenes, I wear a lot of hats — operator, problem-solver, trainer, planner, and sometimes even server — because while HipPOPs looks and feels like a big, established brand, we’re still in the early stages of our lifespan. That means every event matters, every system is being refined, and every guest interaction helps shape what this brand becomes long-term.
What I’m most proud of is that we’ve built more than a fun concept — we’ve built a real brand and a scalable system that can grow without sacrificing quality or experience. None of that happens alone. I wouldn’t be able to do this without my business partners (Shay, Tone and Daniel) and our incredible team of POPstars who bring the energy, precision, and hospitality to every event. What truly sets us apart is that combination of professionalism and heart: we run tight operations, care deeply about the product and the guest experience, and treat every event like it’s the one people will remember us by. That mindset has allowed us to grow aggressively while protecting what matters most — delivering a “memorable dessert experience.”
How do you think about happiness?
What makes me happy is seeing HipPOPs grow into a reputable, trusted brand that people actively seek out in the ice cream catering industry. It’s incredibly rewarding to know that when companies and communities book us, they’re choosing us because they trust our quality, our service, and the experience we deliver. Even more fulfilling is our team — our POPstars genuinely love what they do, and that energy shows in every event. Watching our staff take pride in the brand, bring joy to guests, and represent HipPOPs with enthusiasm and professionalism is what keeps me motivated. Knowing we’ve built something people want to be part of — both as customers and as employees — is the part of this journey that brings the most happiness.
