Meet Derek and Chef Jami Fynboh

Today we’d like to introduce you to Derek and Chef Jami Fynboh.

After a thirteen-year hiatus from the restaurant industry, Derek and Chef Jami returned nearly seven years ago to open mmm…COFFEE! A Paleo Bistro, the nation’s first grain-free restaurant, as an outlet for their passions. Through the wonders of nutritionally dense food, Chef Jami began to heal from a several-years-long health crisis that had left her house-bound. Wanting to share her newfound health with others through delicious, homemade food, she agreed to join Derek in his vision of a hospitality-focused, world-class coffee shop.

Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Chef Jami was diagnosed with chronic Lyme disease a few years after opening mmm…COFFEE! While the diagnosis brought much-needed answers, it also kickstarted her quest to heal herself completely — a goal that took over five years, several methods of healthcare, and a great deal of her energy, all while she and Derek continued to provide tasty Paleo food for the public and worked to keep their restaurant going strong.

mmm…COFFEE! A Paleo Bistro – what should we know? What do you guys do best? What sets you apart from the competition?
We were the first Paleo restaurant in the nation when we opened. We are happy to boast a completely grain-free, gluten-free environment and spectacular hospitality. Additionally, our coffee, which is Derek’s life passion, is among the best in Colorado. We are thrilled to serve locally-roasted espresso and coffee, poured to perfection every time.

What moment in your career do you look back most fondly on?
It’s hard to pick just one. Every day, we’re touched by the stories of our customers, many of whom are eating out with family for the first time in years, getting to feel “normal” despite their health and dietary needs, or finally getting a birthday cake they can actually eat and share with their loved ones — this really is the reason for what we do.
