Meet Jose and Marianne Espinoza of Trestles Coastal Cuisine in Castle Pines

Today we’d like to introduce you to Jose and Marianne Espinoza.

Thanks for sharing your story with us Jose and Marianne. So, let’s start at the beginning and we can move on from there.
We fell in love with the south Denver area when our son moved here in 2010. A family of foodies, we noticed very little seafood in the area and knew we could fill that need. While still living in CA, we came up with the name, Trestles Coastal Cuisine. Trestles is a famous surf spot in SoCal that stirs up thoughts of the perfect day at the shoreline and your favorite place to be. With many years of experience in the restaurant business from DC to CA to CO, we had a business plan for a restaurant started in case the opportunity presented. Once in the Denver area, we utilized SCORE, an organization of volunteer business people that we highly recommend. They help entrepreneurs to assess major & minor business plans and they are awesome.

Our goal was to create a fine dining restaurant in a comfortable setting, a place you want to bring out of town guests to, where you can celebrate life’s special events with friends, family & great food. Where you feel appreciated and welcomed by our staff’s Colorado hospitality.

We opened in Castle Pines Village at the corner of W. Happy Canyon Road & Santa Fe (Rt 85) in the fall of 2017 and in the two years since our fabulous staff and our guests have fulfilled those goals for us; many becoming very familiar friends.

We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
We feel that God has been with us and for us every step of the way. We found just the right employees in a very tight job market, our location turned out to be perfect and our customers are the best. The timing was right for the community and us.

So let’s switch gears a bit and go into the Trestles Coastal Cuisine story. Tell us more about the business.
We are definitely seafood-focused but, have Lamb, Steaks & Chicken dishes as well. We purchase the best, fresh, seasonal seafood available. Oysters on the half shell are a big draw originating from the Pacific Northwest & Atlantic shores from PEI to VA. We specialize in fresh fish from around the globe prepared in our Chef’s inimitable fashion with sauces that will leave you dreaming of your next visit. New England Clam Chowder, Maryland style Crab Cakes, Lobster Rolls copied from our favorite place in Connecticut, Fish Tacos from Southern California, Colorado Rack of Lamb and Cioppino from the Mediterranean are some of our best sellers. All of our desserts are prepared in house with the finest ingredients by our dedicated pastry chef and they are worth every calorie.

The Dining room has a bright fresh feel with front range views through soaring arched windows and our patio is open May to October, weather permitting.

What makes us proudest though and sets us apart, are our employees who take great pride and care in producing consistently high-quality food and service. Our customers ask for servers by name and send regular praises back to the kitchen.

Has luck played a meaningful role in your life and business?
We believe people are important and that integrity, passion and hard work will get the job done. We think work should be fun even when it’s difficult. There’s a saying hung on the wall in the kitchen, “love people, make them tasty food”. Simple.
