Today we’d like to introduce you to Kathryn Pfeffer MS, RD
Hi Kathryn, please kick things off for us with an introduction to yourself and your story.
I’ve been a Registered Dietitian for eight years where I started (and interned) in Boston. Nutrition was always a vital aspect of my life as I grew up in a household with both parents as medical pioneers in the cardiovascular field. My mother lived her life to the fullest, which was sadly shortened from Type 1 Diabetes. I witnessed our home cooking changing to tailor her dietary needs (diabetes and then dialysis). I continue as a full time clinical dietitian (from Boston to Boulder county). I strive to communicate with my patient’s nutrition recommendations backed by sound science. With all of the diet fads and miscommunication, it is a challenge to promote accurate health knowledge. The best parts of my day are seeing my patients suffering from malnutrition in the hospital and going home as new vibrant self thanks to adequate nutrition and help from the rest of our interdisciplinary team. When I started out as an RD I was dating my now-husband, who is a lifelong vegetarian. At this time, I had to learn how to move from my omnivore diet to vegetarian cooking. While experimenting in the kitchen, I became fascinated with different cooking methods and food photography. This led to my blog, One Hungry Bunny. My blog focuses mostly on vegetarian cooking. However my goal is to be able to modify my recipes to common diets, such as vegetarian, omnivore, and even gluten free. As a dietitian, I hope to communicate more of my nutrition knowledge to a greater audience while sharing fun recipes I have been testing in my kitchen!
We all face challenges, but looking back, would you describe it as a relatively smooth road?
Before becoming a Registered Dietitian, I earned my MS in nutrition in Boston and took time off before enrolling in the dietetic internship to be a WIC nutritionist. This experience is shaped me to be a better dietitian. It was an emotional roller coaster and life experience. I met some amazingly strong women (and men) trying to provide for their families. I learned so much about cultural and economic differences. And now, as a food blogger and full time RD, it has been harder to balance. I am a mom to a toddler and with a second on the way. Sometimes my photos and recipes are done during a brief nap time, which might be the only free time I have!
Thanks – so what else should our readers know about your work and what you’re currently focused on?
Registered RD in the clinical setting and also some Telehealth nutrition with clients outside of work. I assess patients in the inpatient acute rehabilitation setting (ones that have been discharged from the hospital). I face a lot of clientele with malnutrition, obesity, cancer, and cardiac disease. I am proud of getting my patients healthier and stronger. As a blogger, I am proud of making an impact on my audience. When people are happy with the turnout of my recipes and share them with others, I feel honored! I think being a clinical RD and blogger is an excellent combination to make a greater impact with science-based knowledge.
Are there any apps, books, podcasts, blogs, or other resources you think our readers should check out?
Reading books from culinary experts has helped me be more adventurous in the kitchen. I really love The Food Lab and the Flavor Bible, permanently on my kitchen counter. I also really enjoy blogs and podcasts by fellow Registered Dietitians; we need to support each other.
