Meet Katie Schroepfer of Good Sugar Baking in River North

Today we’d like to introduce you to Katie Schroepfer.

So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
Good Sugar Baking started because I had always been that person that would bring all of the baked goods to every event or even just to work or a friends house. Eventually, I had enough people tell me I should start a bakery, so I did! I’ve always loved working closely with nonprofits, so I give a percentage of every sale back to a nonprofit which rotates twice a year, right now it’s currently Feeding Denver’s Hungry. So the name Good Sugar Baking stems from giving back to nonprofits. With the help of a Kickstarter and loyal people, Good Sugar Baking continues to grow and be successful. Without the continuous support of the community, this bakery would not be able to grow as it has. I work with a ton of breweries around town doing beer and dessert pairings and selling cookies in two packs for their customers to enjoy with their beer.

Has it been a smooth road?
Is there such thing as a smooth road?! Since I’ve worked in the beer industry for close to ten years, I’ve had a lot of connections which has been incredibly helpful. Not knowing much about accounting, taxes, legal issues, commissary kitchens was a struggle, but with the help of food truck owners and other small business owners, I’ve had the smoothest ride possible.

So, as you know, we’re impressed with Good Sugar Baking – tell our readers more, for example, what you’re most proud of as a company and what sets you apart from others.
Good Sugar Baking sets up a ton of beer and cookie, beer and cupcake, wine and cupcake, etc. pairings all around Denver and expanding around to other parts like Littleton. We started out just doing cookies but have expanded to many different baked goods, like cupcakes, cakes, pies, muffins, brownies, blondies, etc. A lot of people bring up the tomato cookie, one of the cookies that we have had since the beginning. It’s delicious!

I am so proud of how far this business has gone with just me. I don’t have any employees or helpers (sometimes some friends are extremely helpful though). I’ve learned more about running a business and how to have a personal life while working more hours than I even know. I am extremely happy to have the support of so many people.

What sets Good Sugar Baking apart from others is giving back to nonprofits and working together with them. Not only do we have a set nonprofit that a percentage of every sale goes to, but we do events and partner up with others all the time too.

Let’s touch on your thoughts about our city – what do you like the most and least?
I’ve lived in Denver for almost eight years now! I like the diversity, how there’s always something going on and fun things to do. We have a great community that works so well together, it’s incredible to see so many supportive small business owners.
