Meet Kristen Scott of SimplyBakedCo in Berthoud

Today we’d like to introduce you to Kristen Scott.

Thanks for sharing your story with us Kristen. So, let’s start at the beginning and we can move on from there.
First off when I found out I was pregnant with my son, Nash, I knew breastfeeding was going to be my only option. What I didn’t expect was how hard our journey was going to be. With a degree in Culinary Arts, feeding people is what I do. Its my passion. Having a low milk supply and not being able to satisfy my son was heartbreaking and it made me feel like a failure.

I was a first-time mom and knew I was only going to breastfeed, I was a sickly child and wanted to provide my son with as much immune help as possible. I did lots of research, took classes, and listened to advise from other moms (some advice was pretty scary). Still, I was dead set on breastfeeding.

My sons birth was pretty traumatic and we ended up having an emergency C-section. He was to not have a pacifier or formula to ensure we got off on the right foot to our breastfeeding journey. It was hard. Breastfeeding is hard. We had lactation consultants and nurses trying to help get him to latch and I was pumping with a medical pump trying everything to get my milk to come in.. I was determined. He had fallen under 10% of his birth weight. They were worried. I was determined.

We were sent home. A lactation consultant visited and said all looked good. I pumped for her and got nothing. I started going to a lactation specialist and she was amazing. She gave me support and hope. She thought Nash may have an allergy to soy and dairy, so I immediately eliminated them from my diet. She also told me about foods that help boost your milk supply. I was shocked and intrigued! This became my new obsession.

Nash was hungry and not sleeping well (because he was hungry). Our pediatrician was pushing for us to use formula. I was angry and scared. We did give Nash a few bottles of formula and donated breast milk using paced-bottle feeding and I started eating all foods that are supposed to help boost your milk supply. My sister-in-law introduced me to Lactation Cookies and I had to figure out a way to make them soy and dairy-free and a little healthier. Let’s just say the theory that breastfeeding will melt your baby weight off did not work for me.

I developed a recipe for lactation cookies and they were helping me, I actually pumped over 2 ounces in a sitting. That was huge! I took some samples to my lactation class and the girls loved them! My other sister-in-law has a shop on Etsy and she suggested I open a shop. With her help, I did, and we are helping to “Boost” mama’s milk supply all over the U.S!

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
It’s actually been pretty smooth. I have a great following and moms love to talk so word of mouth helps me a lot. If there are any struggles, it would be dealing with SEO and the constant changing of algorithms. The neighborhood kids love Sundays because that’s when I start to bake!

Let’s talk about business. Tell us about SimplyBakedCo – what should we know?
My business is SimplyBakedCo. I have an Etsy shop and I make lactation goods that help nursing and pumping moms make more breastmilk. We make lactation cookies, brownies, granola, granola bars and we also offer teething biscuits and whole wheat animal crackers for the littles. We offer over 27 lactation cookie flavors and are happy to work with allergies and intolerances.

I think what sets me apart is that I’ve been there. I know the struggle of having a low supply and the desire to find something, anything that will help. I’m happy to try and I want to be there for each and every mama. If I can help someone further in their journey, then I’ve done my job.

Any shoutouts? Who else deserves credit in this story – who has played a meaningful role?
I would have to do a huge shout out to both my sister-in-laws. Jenny was a huge advocate in continuing my breastfeeding journey. She shared all the knowledge she could and was never judgmental. She even shared her breastmilk with me and for that, I will be forever grateful.

My other sister-in-law was a wealth of knowledge and support when it came to setting up my Etsy shop. She helped with pictures and listings and helped get me on my way to being a work at home mom! Thank you, Beth, for seeing a business opportunity and helping me build it!

And last but not least, my wonderful husband, for never having a free moment. For letting me work on your days off. Thank you for supporting me from day one for sleeping on the couch for ten months so your snoring wouldn’t wake the boy. And you’re the best cookie taster I know!
