Meet Leigh Davison of Lucky Bird in Edgewater

Today we’d like to introduce you to Leigh Davison.

Thanks for sharing your story with us Leigh. So, let’s start at the beginning and we can move on from there.
For the past ten years, I have been working as a Chef around the country and I studied at the Culinary Institute of America in Napa Valley. I eventually ended up in Aspen, Colorado where I worked as a private chef. Falling in love with Colorado I knew I wanted to start my business here. Along came the Lucky Bird concept and it started as a Food Truck in Denver Colorado. After a year of hitting the streets, we finally ended up at Edgewater Public Marketplace where be offer gourmet chicken tenders and sauces. I can promise you, this won’t be your average chicken tender experience!

We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
It is never a smooth road in starting a business but fortunately, the food truck community is extremely helpful. Some struggles initially were finding the customers, where to park the truck, getting the name out there. Once we started networking we found some great spots to go in the Denver area and deliver a great product.

So let’s switch gears a bit and go into the Lucky Bird story. Tell us more about the business.
We are known for our chicken tenders, sauces, and sweet potato fries. We brine, double dredge, and fry the chicken in house and straight from raw. It really makes for the best and juiciest chicken tender. We pride ourselves on being a scratch kitchen and serving chef-driven menu items. I have been working on these recipes for the last ten years and learning from people I have been working with to help deliver an exceptional product.

Has luck played a meaningful role in your life and business?
Well, the Lucky Bird name came from me being lucky. Sometimes the cards all align and you get a little lucky in life with different opportunities. You just have to make sure to pursue them and work hard.
