
Today we’d like to introduce you to Ryan Dalbey.
Ryan, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
I’ve spent a lot of earlier years working in kitchens and had a passion for simple, high-quality food. But after college, I got out of the industry for about 15 years until I sold my house and opened a small deli food trailer.
We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
Opening a food truck or trailer is never as easy as it seems, like on the food network shows. I had one time I was pulling my trailer home in 20-degree temperature and a bolt holding my leaf spring in place shredded and my entire left side came crashing down on the axel. But all and all it’s been very rewarding being my own boss.
We’d love to hear more about your business.
I opened in August 2018 and we specialize in gourmet deli sandwiches. The thing that sets us apart is our process. We steam the meats and cheese when ordered hot and put it on fresh-baked bread, which prevents them from drying out. We also use local meat & bakers.
What were you like growing up?
I was a skater kid and a class clown. I also enjoyed working at pizza places and restaurants ever since I was 14.
