Today we’d like to introduce you to Tiffany Helton and Jake Fitzsimmons.
Tiffany and Jake, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
We are restauranteurs by trade. We are the co-founders of the Stuft Burger Bar locations in Windsor and Fort Collins. We have had a lot of success in the burger industry and wanted to branch out and try something new. Brewing beer and smoking meats were intriguing to us and we thought we could deliver something unique to Greeley.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Every restaurant/brewery we open has its own unique features. Our downtown Greeley building is 100 years old. That in itself comes with its own set of challenges. Our brewery is also in our building’s basement which made construction and brewing tank delivery very interesting…
As far as this brewery opening. It was a very smooth opening. We are very grateful that Greeley has embraced us with open arms and has really supported us.
Please tell us about your business.
Lonesome Buck Brewery is located in the heart of downtown Greeley. Our 100-year-old building is beautiful and unique. We have 12 of our beers on tap and four wines on tap as well. We take a lot of pride in the quality of our beer. Cameron Huff, Head Brewer, has come up with some incredible batches. Our most popular beer on tap is “Becky with the Red Hair” raspberry blonde. You’ll find us using some pretty unique ingredients in our beer such as chilies, smoked pumpkins, and ginger. Check back with us to try our barrel aged beers ready in a few months.
Pairing well with our beers is our fantastic smokehouse meats! All of our brisket, ribs, pork, and turkey is slow smoked over oak for 12 hours to juicy perfection. Try our spent grain pretzel made with real leftover grain from our brewing process. A must-try is our Poutine Fries. Our most popular is topped with cheese curds, brisket, and our cabernet gravy.
