Meet Trailblazer Lindsay Saggau

Today we’d like to introduce you to Lindsay Saggau.

Lindsay, please share your story with us. How did you get to where you are today?
Hi, I’m Lindsay — a self-taught baker addicted to making {and eating} macarons and other sweet treats! I’ve always loved to bake and grew up watching {and helping} my mom bake yummy desserts. I hope to pass the baking baton down to my daughter once she’s out of her sponge bob and play-doh stage {yes! She’s a sassy 4yr old}.

 ​Macarons are some of the hardest things I’ve ever made. I “attempted” to make them in October of 2018, starting out with seven failed batches in a row. I was determined to get ONE good batch {and I did, finally}. After that, I just couldn’t stop! I was making WAY more than what I could eat {not great for the waist line}, so I started bringing them to family, friends and work {oh ya, I also have a full-time career outside of baking}. They all encouraged me to start a macaron biz…..and here I am. I started this adventure in April of 2019 and am still learning to master my recipe, but the challenge keeps me going.

 My macarons and other baked goods are definitely a labor of love and I hope everyone enjoys them.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Of course, there are challenges in every batch of macarons that I make. It’s kind of like a gamble – every time! Just the littlest change can produce (as I call them) ‘Ugly Macs’. Even the weather plays a huge role. BUT, you learn from the experience and keep on going!

Alright – so let’s talk business. Tell us about 3oh3 macarons – what should we know?
I specialize in making macarons – Swiss Method (there are other methods—French, Italian). This really just differentiates how they are prepared and the stability of the batter. My macarons are typically stuffed with quite a bit of filling (that’s just how I like it) and I also like to offer custom shapes!

 I also recently started learning how to make royal icing sugar cookies and I bake and decorate cakes occasionally, too!

Do you recommend any apps, books or podcasts that have been helpful to you?
I belong to a wonderful Macaron Facebook group. We bounce ideas off each other and come up with flavors, or help with troubleshooting issues. This group is a ‘life saver’ and everyone is so supportive.
