Meet Wassim Kabouk of Zaman Mediterranean Fresh

Today we’d like to introduce you to Wassim Kabouk.

Hi Wassim, we’d love for you to start by introducing yourself.
I grew up in Damascus, Syria, where my family’s love for cooking was a central part of our culture. In 2014, I moved to the United States, and as time went on, I began to miss the authentic Middle Eastern cuisine that I had grown up with. Determined to share my culture’s flavors with others, I decided to roll up my sleeves and learn to cook these dishes.

To make this happen, I connected with my family in Syria through daily video calls, and they taught me their secret recipes and techniques. Along the way, I met friends who shared my passion for food, and together, we dreamed of opening a restaurant to introduce Denver to the rich variety of Middle Eastern flavors.

Building a dedicated team, sourcing spices and ingredients from the Middle East, and countless sleepless nights later, Zaman Mediterranean Fresh became a reality.

Can you talk to us about the challenges and lessons you’ve learned along the way? Looking back, would you say it’s been easy or smooth in retrospect?
Opening our restaurant certainly had its share of challenges, especially considering the timing in the wake of the pandemic. Getting the necessary equipment and supplies proved to be a lengthy ordeal, partly due to supply chain issues.

However, the most significant was assembling the right team. Authenticity in Middle Eastern cuisine was our priority, so we carefully selected kitchen staff from our own Middle Eastern community to ensure our dishes stay true to tradition.

At Zaman Mediterranean Fresh, we’re all about bringing the authentic flavors of the Middle East to Denver. Our food goes beyond being a meal; it’s a cultural experience.

Every bite is a flavorful journey that transports you from Denver straight to the Middle East. In our culture, meals are a time for gathering with loved ones, and that’s what we hope to offer at Zaman – a chance to enjoy incredible food with the people you love.

Can you talk to us a bit about happiness and what makes you happy?
What makes me happiest is sharing the rich flavors of my Syrian heritage through Zaman Mediterranean Fresh.

We work hard to offer authentic Middle Eastern cuisine, but the real satisfaction comes from seeing our guests enjoy their meals with friends and family. We take pride in providing more than just food; it’s creating a welcoming atmosphere for everyone to enjoy.
